Here are a just few suggestions to introduce this wonderful vegetable: </p><p> RAW: First, peel them with a vegetable peeler. Slice and enjoy as a snack. Chop, dice, or grate them and add to salads. Create a unique salad with diced rutabagas and other vegetables of your choice. Grate them and add to cole slaw. Grate and combine with carrot salad. </p><p> COOKED: Rutabagas can be roasted, boiled, steamed, stir-fried, mashed, or stewed. Cook them with potatoes and mash together. Here's a rutabaga winner.<br /></p><p><br /> </p><center><span style="font-size:130%;"><b><u>RUTABAGAS IN THE ROUGH</u></b></span></center> <p> <br /> </p><menu>4 large rutabagas <br /> 1/4 t. salt <br /> Water <br /> 1 T. extra-virgin olive oil <br /> Dash of nutmeg <br /> Salt and pepper to taste</menu> <p> </p><ol><li> Peel rutabagas with a vegetable peeler, and cut into chunks. Put them into a 4-quart (4 liter) saucepan, add the salt and about 2" (5 cm) of water to cover. Cover saucepan, and bring to a boil over high heat. <p> </p></li><li> Turn heat down to medium and cook about 12 - 15 minutes, or until fork tender. Drain, reserving cooking liquid. Using a potato masher, coarsely mash rutabagas in the saucepan, adding cooking liquid as needed for moisture. <p> </p></li><li> Add olive oil and nutmeg. Season to taste with salt and pepper. The students here at San Pasqual Academy are so overstuffed with strawberries that they are even willing to pass on a delicious box of them. Due to our overflow in strawberries we are now allowing our CSA customers (thats you) to order just strawberries. If you are interest in ordering we will have them delivered to your usual CSA pick up spot on your usual pick up day. At this time we are offering the 3 cart boxes for 6 dollars, a three cart box is about 2.5 lbs, and 1 cart for 2.50, which is about 1 lb. </ul></div><div id="recipe-method"><h3>Method</h3><b>1</b> Rinse out the Swiss chard leaves thoroughly. Remove the toughest third of the stalk, discard or save for another recipe (such as this <a href="http://www.elise.com/recipes/archives/001892sauteed_swiss_chard_ribs_with_cream_and_pasta.php">Swiss chard ribs with cream and pasta</a>). Roughly chop the leaves into inch-wide strips. <br />
<b>2</b> Heat a saucepan on a medium heat setting, add olive oil, a few small slices of garlic and the crushed red pepper. Sauté for about a minute. Add the chopped Swiss chard leaves. Cover. Check after about 5 minutes. If it looks dry, add a couple tablespoons of water. Flip the leaves over in the pan, so that what was on the bottom, is now on the top. Cover again. Check for doneness after another 5 minutes (remove a piece and taste it). Add salt to taste, and a small amount of butter. 4 or 5 fresh mushrooms, sliced<br />
2 garlic cloves, minced<br />
2 tablespoons olive oil or butter<br />
1/3 cup of one of the following :dried fig, raisins, dried cherries, sun-dried tomatoes<br />
1/4 cup of one of the following: pinion nuts, pecans, walnuts<br />

Directions:<br />

1. Wash greens well and chop roughly. Set aside in a collander to drain.<br />
2. If using sun-dried tomatoes, pour enough boiling water over them to cover them and let sit 10 minutes or until soft and drain.<br />
3. Toast nuts in oven 10 minutes. A toaster oven will save energy, or toast nuts while the oven is on for other baking. They can be toasted ahead if time and kept in an air tight container.<br />
4. In a large non-stick skillet, heat oil or melt butter.<br />
5. Add garlic and mushrooms and saute 2 minutes.<br />
6. Add greens, dried fruit or re-constituted tomatoes, and nuts. Stir and cover to steam.<br />
7. Cook, stirring occasionally, until greens are bright, dark green and tender, and heated through, about 5 minutes. <br />
<br />

Ingredients:<br />
1 tsp. peanut oil<br />
3 tbs. minced shallots<br />
2 carrots, sliced diagonally<br />
1 cup fresh green bean, cut into 1 inch pieces<br />
1 cup chopped bok choy<br />
1/3 cup low sodium, low broth vegetable broth<br />
1 tbs. light soy sauce<br />
<br />
Directions:<br />
Heat the oil in a wok or skillet over high heat.<br />
Add the shallots and saute for 3 min.<br />
Add the carrots and stif fry for 3 min.<br />
Add the green beans and stir fry for 2 min.<br />
Add the bok choy and stir fry for 2 min<br />
Add the Broth and let simmer for two min.<br />
