Caprese Salad

Ingredients

  • 3 vine-ripe tomatoes, 1/4-inch thick slices
  • 1 pound fresh mozzarella, 1/4-inch thick slices
  • 20 to 30 leaves (about 1 bunch) fresh basil
  • Extra-virgin olive oil, for drizzling
  • Coarse salt and pepper

Directions

Layer alternating slices of tomatoes and mozzarella, adding a basil leaf between each, on a large, shallow platter. Drizzle the salad with extra-virgin olive oil and season with salt and pepper, to taste.

      The tomato originated in the Andes Mountains in South America. Maya and Aztec people grew tomatoes, therefore, Its name is derived from the Aztec word “tomatl”. Spanish explorers introduced the tomato to Europe in the 1600’s where it was embraced by Spaniards and Italians. Turns out Tomatoes are in the fruit family, but they are served and prepared as a vegetable. Today Tomatoes are one of the most popular vegetables eaten by Americans

      STRAWBERRIES GALORE

       Dragon Organics has 20 rows of strawberries and we're trying to get rid of them!!!!! The students here at San Pasqual Academy are so overstuffed with strawberries that they are even willing to pass on a delicious box of them. Due to our overflow in strawberries we are now allowing our CSA customers (thats you) to order just strawberries. If you are interest in ordering we will have them delivered to your usual CSA pick up spot on your usual pick up day. At this time we are offering the 3 cart boxes for 6 dollars, a three cart box is about 2.5 lbs, and 1 cart for 2.50, which is about 1 lb. You cannot go anywhere and get this type of deal on conventional or organic strawberries, especially not with our taste. So if your having a meeting, into making jams or just want something healthy to snack on do not hesitate because with this deal they are sure to go fast!
